The collection for the chef is a real sum of Old Polish culinary knowledge. The collection of recipes and tips from various sources was written down for Rozalia Pociejowa née Zahorowska, the owner of Uściług (Ustilug) in Wołyn (Volyn) and Strzyżów, Włodawa and Różanka, located today in Poland. The title of the whole and a selection of over a thousand handwritten recipes that create an image of the ancient culinary art and table culture indicate the practical nature of the collection drawing on the wisdom of generations. The text, edited in 1757, contains, among others: a copy of the lost ‘Kuchmistrzostwo’ [Chef’s craft] from around 1540, the crown chef’s recipe from 1633 and the recipes of neighbours, friends and doctors of the Zahorowski family. Descriptions of the healing properties of food and the production of home-made medicines are accompanied by various types of farm advice on animal welfare, horticulture, horticulture and beekeeping. The manuscript, from the collections of the National Library of Ukraine, was published thanks to the cooperation of researchers and Polish and Ukrainian institutions. Recipes written for the heiresses of the Russian Zahorowski and Pociej families are part of our common heritage, stories not only about food, but also about aesthetics, knowledge, religion and identity. Today it delights with its versatility and the beauty of the language describing everyday events and joys.
